Before I dive in, I have to say 'thank you' for continuing to visit my site even though I have not updated it in over a year. My life has been a whirlwind over that period with lots of changes and almost zero time for myself. I made the decision to forgo updating Lazy Gluten Free in order to retain some semblance of sanity. I did not shut it down however, because I still get several thousand views per month. So to all of you who have kept LGF alive in my absence - THANK YOU. My plan is to post periodically, aka, when I can. Hopefully at least twice a month. I plan to not spend as much time on each post, so forgive my picture quality and lack of stories with every post. But hey, you'll at least get some new recipes, so give me some grace here. :)

Ever since I went to Bonefish Grill earlier this year and had their Mango Salsa, I've been hooked. Although, I knew replicating their delicious sweet and spicy mix would be nearly impossible, I still wanted to attempt something similar. There's just something about a light fruity salsa atop fish or chicken; I can't place what it is, but I love it.
Almond Chicken with Strawberry Balsamic Sauce
Ever since my husband told me that he didn't like fruit on his chicken, I've been determined to prove that he does. This is the third time now that I have made something involving chicken and fruit that he has really enjoyed. Maybe he just had a bad experience, who knows. What I do know is that he does in fact like fruit on his chicken now, or at least when I make it. :)
Simple Salsa Rice Chicken
This is one of those recipes that came together on a whim and I decided to just roll with it. My sister suggested something with salsa and chicken for dinner, and i wanted rice and to use some cilantro from my mini-garden. After pondering awhile I decided to combine them and see what happened. I'll admit, I was a bit surprised at how well this dish turned out given its extreme simplicity. I was hesitant to even post it since it's so easy. However, I figured you would appreciate how quick and tasty this dish is, so I decided to post it anyway. I'll definitely be making the rice as a side dish more often.
Fresh Balsamic Vinaigrette Chicken
Creamy and rich dishes always top my list of favorite meals to make, but occasionally it is nice to have something more wholesome and fresh. This balsamic vinaigrette chicken is very easy to put together, involves little prep time, and is packed full of flavor. My husband and I loved it! I highly recommend this recipe if you’re looking for something a little different to try, or if you just prefer low-carb lighter meals.
Honey Dijon Pretzel Chicken
What's sweet, salty, and moist all over? This Honey Dijon Pretzel Chicken! If you ever get that craving for something sweet and salty, this would definitely be a good choice. It was very delicious and I couldn't believe how moist and tender the chicken turned out. Plus, if you chop the pretzels and mix the sauce in a food processor, prep time is cut dramatically and only a couple dishes are used. If you're anything like me, this is a determining factor in whether a recipe is worth repeating or not. I really don't like doing dishes.
Smothered Honey Dijon Chicken
This recipe is yet another Pinterest discovery, and I have to say, it's one of the best recipes I have ever tried. As my husband, Steven, put it: "If Heaven had a taste, this would be it". I know, that's pretty dorky, but seriously. This dish is SO good. Between the excellent marinade, the bacon, and the cheese - YUM. Who knew gluten-free could be so delicious??
Creamy Italian Chicken
Now that it's gotten a lot colder, I am definitely craving more comfort foods, especially on those blustery, rainy, gloomy days. Creamy Italian Chicken came about from something I found on Pinterest for a Crock-Pot. During the week, I simply do not have time for my Crock-Pot, so I took this recipe and decided to wing it and bake it in the oven instead. It turned out to be just what I have been craving - a delicious comfort food.

Pepperoni Stuffed Chicken is yet another way to make chicken fun and interesting. I have been in a pizza mood lately, and this is a good way to satisfy my craving without eating pizza every night. Although I think I might be ok with that...
Crock-Pot Cheesy Chicken Tater Tot Casserole
I love using my Crock-Pot on the weekends since it takes just a little bit of time to throw everything together, and then I can spend the rest of the day lounging around while dinner cooks itself. I found this recipe for Cheesy Chicken Tater Tot Casserole on Pinterest, although it originates from Brandie's blog "The Country Cook". She also has many other recipes that look amazing and I can't wait to try (with gluten-free modifications, of course).
Cream Cheese Stuffed Chicken
Pinterest is such a great resource for finding new and exciting dishes to try. I usually look for easy recipes that can be modified to be gluten-free by changing just a couple of the ingredients. My "Recipe Book" board is always growing with new things to try. This recipe is one of those that I found on Pinterest. The original recipe, "Kaytucky Chicken", is from Kayotic Kitchen's blog. I will be checking out more of her recipes since this one turned out fantastic!

Gluten Free Chicken and Dumplings
Sunday. A day of rest, relaxation, and family time. I have always enjoyed Sundays, whether they involve visiting the family and enjoying a meal together, or just lazing around at home. On those days when we stay home, I try to make a meal that is a little more involved than I normally would during the week. I say "a little" because I still prefer meals that come together quickly. What can I say, I'm a hungry girl.

I sampled from several different recipes until I came up with a one that fit my tastes, and my requirement for simplicity. This is such an easy dish to put together when I don't feel like spending a lot of time in the kitchen. I never quite make it the same way each time, but it always turns out soo good.
