Fresh Balsamic Vinaigrette Chicken


Creamy and rich dishes always top my list of favorite meals to make, but occasionally it is nice to have something more wholesome and fresh. This balsamic vinaigrette chicken is very easy to put together, involves little prep time, and is packed full of flavor. My husband and I loved it! I highly recommend this recipe if you’re looking for something a little different to try, or if you just prefer low-carb lighter meals.


Fresh Balsamic Vinaigrette Chicken

You will need:
3-4 boneless skinless chicken breasts
4-5 garlic cloves
1 cup fresh basil
1 tablespoon olive oil
1 teaspoon balsamic vinegar
1/4 cup water
1 package of cherry or grape tomatoes
1/2 red onion, sliced
1 cup Feta cheese crumbles

Preheat the oven 375F. Grease a 9x13 baking dish.

1) In a large skillet on medium-high heat, brown the chicken breasts, about 1-2 minutes each side.

2) In a food processor, combine the garlic, basil, olive oil, vinegar, and water. Pulse until pureed. Slice the tomatoes in half lengthwise.

3) Place the browned chicken breasts in the greased baking dish and top with the pureed mixture. Sprinkle with the tomatoes, onion and Feta cheese.

4) Bake for about 30 minutes or until chicken is fully cooked.


We served our chicken with boiled diced potatoes tossed with a little butter, garlic, and parsley.
