Gluten-Free Chocolate Peanut Butter Pie
I love making a treat for my close friend's birthdays. So every year I ask them what they want and I do a gluten-free version of their treat of choice. Sometimes they like the basics, like chocolate cake, and other times they prefer to be a little more difficult by simply saying they want "pie". Our good friend just did this for his birthday, telling me that he simply wanted "pie" with no other suggestions at all.

There are so many resources out there now on Celiac Disease that it's almost overwhelming sometimes. When I was first diagnosed in 2008 though, that was definitely not the case. If you "Googled" 'gluten' you came up with a few resources and maybe a couple forums. It became apparent right away that I was on my own with trying to figure out how to eat GF. Back to School Gluten-Free Lunch Ideas
Packing a gluten-free lunch can be daunting sometimes, and even downright frustrating. Believe me, I do it on almost a daily basis. Although I don't have kids of my own, I can only imagine the difficulties faced when preparing a lunch for a gluten-free child. To alleviate some of this stress, I decided to compile some of my favorite GF snacks and lunch ideas, as well as those ideas that I have found around the interwebs. You'll be able to send your kiddo(s) off to school without the pressure, or feed yourself at work. :)

Ever since my husband told me that he didn't like fruit on his chicken, I've been determined to prove that he does. This is the third time now that I have made something involving chicken and fruit that he has really enjoyed. Maybe he just had a bad experience, who knows. What I do know is that he does in fact like fruit on his chicken now, or at least when I make it. :)
Honey Dijon Pretzel Chicken
What's sweet, salty, and moist all over? This Honey Dijon Pretzel Chicken! If you ever get that craving for something sweet and salty, this would definitely be a good choice. It was very delicious and I couldn't believe how moist and tender the chicken turned out. Plus, if you chop the pretzels and mix the sauce in a food processor, prep time is cut dramatically and only a couple dishes are used. If you're anything like me, this is a determining factor in whether a recipe is worth repeating or not. I really don't like doing dishes.
