Easy Skillet Lasagna


Last year I was very much into casseroles. I just loved the convenience of being able to throw a bunch of ingredients into a dish, bake them and be able to eat in less than an hour. However, this year I seem to have discovered the simplicity of skillet dishes. Essentially they're like casseroles, but you don't have to turn on the oven, and they take a little less time to make. 

Beef Stroganoff with Leftover Steak


There was one good sized steak leftover from our grill out this past weekend, which is plenty for just my husband, but not for the both of us to share. Instead of battling it out for the lone steak, I decided to get creative and make one of my classic favorites, Beef Stroganoff.

Birthday Extravaganza: An Owl Cake For Melanie



You only get one 21st birthday, so it should be something to remember. My 21st birthday was not all that exciting, in fact, we were flying home from Las Vegas. Woo. So when it was time for my younger sister's coveted 21st, I was going to make sure that she would have a blast.

Cheese-Garlic Biscuits


Cheese and garlic, what's not to love?? We were going to be grilling steaks for dinner and I wanted something extra for some fill and flavor, so I decided to go with a biscuit that combines two of my favorite things: cheese and garlic. These biscuits were super easy and they turned out very delicious.

Gluten-Free Chocolate Cupcakes


I will take almost any excuse to bake. When I found out today was "National Chocolate Cupcake Day", I figured that was as good of an excuse as I could get to bake. I don't recall the last time that I made cupcakes anyway, so this worked out perfect since I am probably well overdue.

Gluten Free German Chocolate Cake

German Chocolate Cake has always been one of my favorite desserts, and is a love that my dad also shares. Since I had not had the cake since being diagnosed with Celiac Disease almost four years ago, and dad's birthday was coming up, I decided to attempt it. I am so glad I did since this cake turned out amazing! Dad told me three times how much he enjoyed it. Dad's Birthday = success. 

Impossibly Easy Cheeseburger Pie

Another busy week is in fully swing, and by the time I get home from work, I don't feel like doing too much of anything. That's why I plan ahead and keep ingredients on hand for 5 to 9 different recipes that are simple and easy. This is one of those recipes. The ingredients are pretty much kitchen staples, so this can be whipped up pretty quickly as soon as I get home.

Gluten Free Chicken and Dumplings


Sunday. A day of rest, relaxation, and family time. I have always enjoyed Sundays, whether they involve visiting the family and enjoying a meal together, or just lazing around at home. On those days when we stay home, I try to make a meal that is a little more involved than I normally would during the week. I say "a little" because I still prefer meals that come together quickly. What can I say, I'm a hungry girl. 

Chipotle Beef-Stuffed Peppers


Mexican food always makes for a great dinner. I have fun cooking it, and it's usually pretty hard to mess up the recipes. This recipe for example, calls for 4 medium peppers, but I opted for 2 peppers and realized at the last minute that I forgot to reduce the ingredients accordingly. Oops. However, this dish still turned out to be very delicious, and I was glad that my peppers were a little more stuffed than they were supposed to be.

I am not usually one for "from-scratch" recipes, however, there are some occasions that require a bit of culinary "showing-off", and making a cake from scratch is necessary. Especially a gluten-free cake.
