Chicken & Rice Casserole


This is one of my favorite comfort food recipes, and it's one of my husband's favorites as well. I sampled from several different recipes until I came up with a one that fit my tastes, and my requirement for simplicity. This is such an easy dish to put together when I don't feel like spending a lot of time in the kitchen. I never quite make it the same way each time, but it always turns out soo good. 

For this recipe, you will need to use the Gluten Free Cream Soup recipe that I posted previously, or you may use a store-bought kind if you prefer. 



Chicken & Rice Casserole
  
You will need: 
2 cups of Minute rice (white or brown is fine)
1 cup Gluten Free Cream Soup (with chicken flavor added)
1 cup sour cream
1 tablespoon Homemade Italian Dressing Mix
2-3 chicken breasts, cooked and shredded
1/2 cup mixed frozen veggies, optional

Preheat oven to 350°F 

Prepare Gluten Free Cream Soup (with chicken flavor). Cook chicken breasts thoroughly and shred with forks.  

Combine uncooked Minute rice (if you use regular rice you will need to cook it first), GF Cream Soup, sour cream, and Italian dressing mix. Add shredded chicken and mix.

Pour mixture into a greased 8 or 9 inch baking dish. Bake, uncovered, for 15-20 minutes or until top begins to turn golden brown. 

Yield: 4 servings.
