Lazy Gluten Free: Lazy Lasagna

Lazy Lasagna


Lazy lasagna is much like glorified spaghetti, except it tastes like lasagna and it doesn't require all the fuss. Don't get me wrong, I love lasagna (my mom has an excellent lasagna roll-up recipe), but if there's an easier way to make it, I'll take it.

This is another Taste of Home Ultimate Five Ingredient recipe which has the ability to be modified if you're feeling daring. I added pepperoni this time around, and next time I will probably add some Italian sausage to mix things up.


Lazy Lasagna

You will need:
1 jar of spaghetti sauce (Prego Fresh Mushroom is my staple) 
3/4 cup shredded part-skim Mozzarella cheese
1/2 cup 4% cottage cheese
2 tbs grated Parmesan cheese
1-8oz package penne noodles (I used Hodgson Mill's rice penne, I have also made this recipe with DeBoles Rice No Boil Lasagna Noodles, and it turned out perfect)

Preheat oven to 375°F

Cook pasta according to package directions (about 6 minutes for Hodgson Mill's Penne); drain. If using  Deboles Rice No Boil Lasagna noodles, just break the noodles into large pieces.

Mix noodles with spaghetti sauce; stir in the mozzarella and cottage cheeses. Add meat (pepperoni, sausage, etc.), if desired. Pour into an 8 or 9 inch square baking dish coated with cooking spray. Sprinkle with Parmesan cheese.

Bake, uncovered, for 20 minutes or until bubbly. Yield: 4 servings.
