Grilled Ham and Cheese with Kale on Everything Bagels


Thanks to Canyon Bakehouse, I was given the opportunity to try their new Everything Bagel. These bagels make for a great sandwich since they have the delicious taste of garlic, onion, poppy and sunflower seeds baked right in. I posted a similar recipe awhile back (see it here), however, I knew instantly that the Everything Bagel would be amazing with a variation of the Kale Grilled Cheese. 


Remember to massage your kale before you saute it to help sweeten it up. You'll also note that instead of buttering the bread, I used mayo - this adds an extra richness to the sandwich. 

Grilled Ham and Cheese with Kale on Everything Bagels

Ingredients:
    1 garlic clove, minced
    1 tablespoon olive oil
    4-5 kale leaves, rinsed, massaged, and torn to pieces
    2-4 slices of Colby Jack cheese
    Sliced Gluten Free Deli Ham (as many as you wish)
    2 Canyon Bakehouse Everything Bagels
    Mayonnaise or Miracle Whip

Directions:
1) Heat the olive oil in a large pan over medium heat. Add the kale and saute until slightly wilted. Remove kale to a separate plate/dish and set aside.
2) Keep the skillet on medium heat. Add the pieces of ham and cook until just heated (about a minute).
3) Meanwhile, toast the Everything Bagels in a gluten free toaster.
4) Top the bottom bagel slice with 1 piece of cheese, a layer of kale, ham slices, mayo, another slice of cheese, and the top of the bagel. Enjoy!
