Turkey Apple Salad


Summer is such an awesome season, especially here in Michigan. There's just so much to do from going to the beach, checking out farmer's markets, hiking, and the list goes on and on. While I love everything that summer brings, the heat can make it hard to want to cook or bake anything. That leaves me on the constant lookout for easy to prepare meals that involve little to no cooking.


This turkey apple salad is a perfect dish that requires minimal prep time and cooking. I used turkey breast since I had some already cooked, but you could easily use chicken breast as well. If you don't want to turn on the oven for too long, you can easily broil the chicken breasts or put them on the grill. I think grilled breasts would add a nice flavor to the salad as well. 

I loved how light and fresh this salad is with a hint of sweetness from the cranberries and apples. It can be enjoyed over a bed of romaine (as I did), or you could make a sandwich or roll up with it as well. You could even eat it on its own if you preferred. So many options :)

Turkey Apple Salad

Ingredients:
    2 medium red apples, chopped into small chunks
    1/2 cup dried cranberries
    1 small sweet onion
    2 chicken (or turkey) breasts
    2/3 cup Miracle Whip
    salt and pepper, to taste

Directions:
1) Cook or grill the chicken/turkey breasts. Once cooled, shred into pieces or cut into chunks.

2) In a large bowl, combine prepared chicken with apples, cranberries, onion and Miracle Whip. Stir until well-coated (you can add more or less depending on your preferences). 

3) Chill salad for 1-2 hours (if desired). Serve as a sandwich, a wrap, or over lettuce.
