Caramel Pie with Udi's Caramel Cashew Cookie Crust


I've never been big on salty or spicy foods, in fact, I'm not really one for much spice at all. My mom always called me her "bland child", lovingly of course, since I preferred bland dishes. While most people like to spice things up, I can pack away all of the super sweet and rich foods most people can only manage in small amounts. I don't know if this is a side-effect of being Celiac? Maybe I'm just weird. What I do know, is that I sure do have a massive sweet tooth, and I love me some rich desserts.

Peanut Butter Swirl Ice Cream Bars


One of my favorite things about summer is all the ice cream, not to mention, July is national Ice Cream Month. What better way to celebrate than with a wonderful ice cream treat swirled with peanut butter and topped with decadent chocolate? I made this treat for our little Fourth of July celebration, and it was an instant hit. Everyone had a hard time eating just one piece, so we all had two. It was relatively easy to put together, and it tasted like I spent hours making it. Can't complain about that. I will definitely be making this simple and delicious treat again soon!

Annual Holiday Baking 2012

Every year I look forward to the day when my mom, sister, and I gather to bake a variety of holiday goodies. This tradition is always a blast that includes making messes and lots of laughs. I wanted to share our creations with all of you since our annual holiday baking has been strictly gluten-free ever since my diagnosis. This makes for an added challenge, but a much more accomplished feeling when we step back and admire our work at the end. So here you have it, our holiday spread.
