Quinoa Vegetable Skillet


You may remember me mentioning a couple weeks ago that my husband and I have started to eat more produce since we signed up for a produce delivery program. Well, I am still taking advantage of this and am loving receiving fresh produce every week. This week we had a zucchini in our box of goodies, which is one of my favorite veggies (technically it's a fruit, but we won't get into that). 


For a couple days I pondered what to make with this zucchini, and finally I came up with a recipe. That's right, this is a Lazy Girl Original. I was skeptical at first, but this dish ended up turning out to be quite delicious. Steven agreed that it was good, and gave it the stamp of approval for me to share it with you. The recipe is pretty easy, and in my non-expert opinion, is on the healthier side of what I usually make. You could easily lighten up even more by using ground turkey, or skip the meat altogether. I hope you enjoy it as much as we did!

Quinoa Vegetable Skillet

You will need:
1-2 medium zucchini squash
1 red pepper
1 small or 1/2 medium onion
1 pound ground beef
1 can tomato sauce
Dried basil & oregano, to taste
1 cup quinoa, rinsed

1) Prepare quinoa according to package directions.

2) Meanwhile, brown ground beef. Drain grease. 

3)Add pepper and onion to drained beef and cook for 3-4 minutes over medium heat. Add zucchini and cook an additional 2-3 minutes.

4) Add tomato sauce seasonings and cooked quinoa. Simmer for about 5 minutes or until heated through.
