Simple Taco Spaghetti

This recipe was SO easy and SO good - I was actually surprised. Sometimes I go into a recipe thinking that it will be just okay, which was the case with this Taco Spaghetti. However, I was more than pleasantly surprised when I took my first bite and it was delicious! It tastes just like a taco, but as a pasta! If that makes sense...



Simple Taco Spaghetti

Ingredients:
    1 pound ground beef
    1 package gluten free spaghetti
    1 10-oz can Ro-Tel Mild Diced Tomatoes & Green Chilies
    1 tablespoon tomato paste
    1 package McCormick Gluten Free Taco Seasoning Mix, Mild
    Shredded cheddar cheese, as desired
    Fresh cilantro, chopped
    1 roma tomato, diced
    Sour cream, as desired

Directions:
1) Brown ground beef in a large skillet. Meanwhile, in a separate pot, cook pasta to al dente.
2) Once beef has been browned (no pink remains), drain excess grease. Add taco seasoning according to the directions on the package. Add Ro-Tel tomatoes (undrained) and tomato paste. Mix together.
3) Add cooked pasta to beef mixture and toss until noodles are well-coated. 
4) Top with cheese, tomatoes, cilantro, and sour cream.
