Impossibly Easy Cheeseburger Pie

Another busy week is in fully swing, and by the time I get home from work, I don't feel like doing too much of anything. That's why I plan ahead and keep ingredients on hand for 5 to 9 different recipes that are simple and easy. This is one of those recipes. The ingredients are pretty much kitchen staples, so this can be whipped up pretty quickly as soon as I get home.

Impossibly Easy Cheeseburger Pie comes from the Betty Crocker Gluten-Free Cooking cookbook. I don't know about the rest of you Celiacs out there, but I like my food either really really sweet, or pretty bland. I loved this dish due to it's blandness, but I did like it dipped in ketchup for a bit more zest. 


Impossibly Easy Cheeseburger Pie

You will need:
1 lb lean ground beef
1 medium onion, chopped (1/2 cup)
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup Kraft shredded Cheddar cheese (4 oz)
3 eggs
1 cup milk
1/2 cup Bisquick Gluten Free mix

Heat the oven to 400°F. Spray a 9-inch glass pie plate with cooking spray (I use Original Pam). 

In a 10-inch skillet, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain. Stir in salt and pepper. Spread in the pie plate and sprinkle with cheese.

In a medium bowl, stir eggs, milk, and Bisquick mix until blended. Pour into pie plate.

Bake 25 to 30 minutes or until knife inserted in center comes out clean.

You may enjoy this dish dipped in ketchup as Steven and I did.
