Gluten Free Pizza Muffins


I know what you're thinking, how can pizza possibly be good as a muffin? Well, friends, let me tell you. These little pizza muffins are possibly one of the best gluten free things I have ever made. They're gooey, cheesy and are nearly better than actual pizza. And the best part is you wouldn't even know they are gluten free. I had to cut myself off, or I would have eaten all twelve of them.

Italian Sausage Zucchini Boats


I love zucchini for its versatility, its one of those veggies that just kind of goes with anything really. I also really like Italian dishes, so when I came up with the idea to put an Italian twist and use my zucchini, I knew I was on to something.

Gluten-Free Pizza Quesadillas


My husband likes to come up with unique ideas, whether it involves changing the world or pairing random foods together. So the other day when he randomly said that he wanted pizza tacos I laughed at him and said that sounded disgusting. But as I also have a very active brain, the idea kinda stuck around and I ran with it. So when I suggested having pizza quesadillas to Steven, he got excited right away. I guess you can thank him for this super easy and very delicious recipe :)

Grilled French Bread Pizza


Pizza is one of my all-time favorite foods. If you haven't noticed, I also like to try variations on the classic pizza such as Taco Pizza and Loaded Baked Potato Pizza. Since it's been beautiful out lately, we take every opportunity we can to grill out. So I thought trying to grill some variation of pizza was a good idea.

Loaded Baked Potato Pizza



There are no good words to describe how absolutely delicious this pizza is. It should almost be illegal...almost, but I really want to make it again so let's not go there. The idea came to me from a friend of mine who is just as obsessed with potatoes as I am. She couldn’t stop gushing about this baked potato pizza she had at a restaurant, so I made sure to get all the details from her to make my own gluten-free version. 

Cheesy Pepperoni Casserole



Pepperoni Casserole is a fun dish that tastes kind of like pizza, yet kind of like lasagna. It's a nice alternative from either of those traditional dishes, and requires very little prep time. If you want a little more flavor or crunch, you could easily add red or green peppers or some mushrooms. There are many ways to boost this recipe, so have fun. 

Taco Pizza


This past weekend my mom found a recipe for homemade tortilla shells (click here for the recipe) to make since dad was going to be making his 'famous' burritos. We ended up with a couple extra shells, so I racked my brains for something other than burritos to use them in. I came up with Taco Pizza.
