Easy Gluten Free Bruschetta


What better way to enjoy a gluten free baguette than by making bruschetta with it ? The baguette was courtesy of Sweet Christine's Gluten Free Bakery, and it was nothing short of delicious. I typically have tomatoes, mozzarella, olive oil and basil on hand, so this recipe was very easy to put together. 


You could easily use any gluten free bread if you don't have a baguette. I made this recipe up for a light lunch, but it would go great with grilled chicken or as an appetizer if you have guests. Plus, the colors make this dish look very pretty. 



Easy Gluten Free Bruschetta

Ingredients
    1 gluten free baguette (or other gluten free bread), sliced
    2 roma tomatoes, diced
    fresh or dried basil, finely chopped
    1/2-3/4 cup shredded mozzarella cheese
    3 tablespoons olive oil

Directions
1) Heat broiler to 'High'. In a small bowl, combine olive oil and basil. Using a basting brush, spread oil mixture onto slices of gluten free bread/baguette. Put under broiler for 3-5 minutes, or until slightly toasted.

2) Remove bread from oven and top with tomatoes and then mozzarella cheese.

3) Return to broiler for another 2-3 minutes, or until cheese is slightly melted.  If using fresh basil, you can sprinkle a little more on top, if desired.
