Easy Parmesan Crusted Tilapia


I'm sure you know well by now how much I love easy recipes, and if you're new here, now you know. I always look for recipes with a short ingredient list (excluding spices) and minimal prep time. This Parmesan Crusted Tilapia is a recipe I came across on Pinterest and decided to try due to the raving reviews on the website. My mom used to make tilapia or cod and I always liked it, so I knew this version with a slightly crispy Parmesan-mayo topping must be good. It definitely is! I've made it at least a half a dozen times in the past few months now, and it's on the top of my husband's must-request list.


Easy Parmesan Crusted Tilapia

You will need:
1 pound fresh or frozen Tilapia or Cod fillets, thawed
2 tablespoons butter, melted
1-1/2 tablespoons Mayo
1/4 cup grated Parmesan
1/4 teaspoon lemon juice
1-2 drops red pepper sauce (Tabasco)
Basil, to taste
Garlic Salt, to taste

Preheat oven to 400F and coat a baking sheet with non-stick cooking spray.

1) Place fish fillets on prepared baking sheet, not allowing them to touch. Brush each fillet with the lemon juice, if desired. Bake for 10-15 minutes, or until fish is just barely flaking.

2) Meanwhile, mix remaining ingredients together in a small bowl. 

3) Remove fish from oven and using a spoon, spread the Parmesan mixture on each fillet. Bake an additional 5 minutes, or until coating is slightly brown and crispy, and fish is cooked through (will be flaky when tested with a fork).
