Spicy Sausage Pasta


Normally, I am not a huge fan of spicy foods. Every so often though, I get a craving for something with a little heat, which is where this Spicy Sausage Pasta works perfect. The heat is provided by the Ro-Tel tomatoes only, so it's not overpowering by any means. Just enough to warm you up - which is great this time of year when we are lucky to see anything over 20 degrees here in Michigan.


Spicy Sausage Pasta

You will need:
1 tablespoon olive oil
1 pound smoked sausage (check the label to make sure it's gluten free)
1 small onion, diced
2 cups chicken broth
1 (10 ounce) can Ro-Tel tomatoes and green chilies, mild
1/2 cup heavy cream
8 ounces gluten free penne
1 cup Colby Jack cheese, shredded
1/3 cup thinly sliced green onions

1) Heat olive oil in a large skillet over medium-high heat until hot. Reduce the heat slightly, add the sausage and onion, and cook until lightly browned, about 4 minutes. Add the garlic and cook about 30 seconds.

2) Add the broth, tomatoes, cream, pasta, and stir until well-combined. Bring to a boil, cover the skillet, and reduce the heat to medium-low. Simmer until the pasta is tender or about 15 minutes.

3) Remove skillet from heat and stir in 1/2 cup of the cheese and, top with the remaining cheese. Cover until the cheese is melted. Top with green onions.
