Easy Gluten-Free Pear Cobbler


Every new year I always resolve to eat better, and every year I start out great with buying and eating my fruits and veggies, but as the year goes on my health-kick always dwindles. This year, however, is going to be different. Simply because I no longer have an excuse for not getting my fruits and veggies - I signed up for a program that delivers them right to my doorstep! How convenient is that??

The company is called Door to Door Organics, and they work with farmers to deliver fresh and delicious produce right to your door. I saw a friend post something about it and out of curiosity I decided to check it out. Since there is no contract and you can customize your order to your taste preferences, I decided there was nothing to lose by giving it a try. There are a few different size boxes that you can choose from to meet your family's needs, and you can tell them what fruits and veggies you love, and which you would rather not have. I'm in my third week now of getting deliveries, and I have to say, I will not be stopping anytime soon. 


The produce is fresh and delicious, and I love that what I receive is chosen for me, so it gives me something to look forward to every week - seeing what fruits and veggies we'll be getting. And I always have the option to substitute if there's something I don't really want. I've been having fun coming up with new recipes to utilize the produce, and am feeling great about being able to easily incorporate more fruits and veggies into mine and my husband's diet (turns out he loves produce, who knew?).

Anyway, my whole reason for telling you all that is not just to share how lazy I really am (eating more produce outweighs that though right?). My most recent order contained some beautiful looking pears that I decided needed a great recipe to go in. That's when I found this super easy recipe for pear cobbler, which turned out to be super simple, and so incredibly delicious. It was hard not eat the entire dish, but still being the beginning of the new year, that wouldn't fit in with trying to eat better...



Easy Pear Cobbler

You will need:
2-3 pears, sliced (about two cups)
3/4 cup sugar + 1/2 cup for pears
1/2 stick (4 ounces) butter
3/4 cup King Arthur Gluten-Free Multi-Purpose Baking Flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup milk
1 egg

Preheat oven to 325F. Lightly spray a 9x9 inch baking dish with nonstick cooking spray.

1) Once oven is heated, place butter in dish and melt in the oven. Remove once melted.

2) Place sliced pears and 1/2 cup sugar in a bowl and stir. Set aside.

3) Meanwhile, whisk egg and milk together in a large bowl. Add flour, baking powder, cinnamon, salt, and 3/4 cup sugar and whisk until well combined.

4) Pour batter over melted butter and spread somewhat evenly in pan. Add pears evenly on top of batter, but do not mix in. 

5) Bake, uncovered, for 50-60 minutes or until golden brown and edges are slightly crispy.

Enjoy with vanilla ice cream.
