Lazy Gluten Free: June 2013

Prosciutto, Tomato, and Olive Fettuccini

Ever since I can remember, I have loved pasta dishes. More than love actually, I honestly dreamed of warm pasta covered in a delicious creamy sauce. Every night I would ask my mom what was for dinner, and when what she told me did not include some variation of pasta and a creamy sauce, I felt like a little kid let down at Christmas when Santa didn't bring me that one toy I desperately wanted.

Almond Chicken with Strawberry Balsamic Sauce

Ever since my husband told me that he didn't like fruit on his chicken, I've been determined to prove that he does. This is the third time now that I have made something involving chicken and fruit that he has really enjoyed. Maybe he just had a bad experience, who knows. What I do know is that he does in fact like fruit on his chicken now, or at least when I make it. :)

Gluten Free Cinnamon Swirl Banana Bread

To be honest, I was a little concerned that I was not going to be able to post this week since we spent all weekend moving into our new home! I am very excited about all the space I now have to spread out in, and that my kitchen is now double the size of my previous one. Let me tell you, having only nine sets of cupboards, two drawers, and no pantry was not a picnic. Now I have so much storage, it's almost overwhelming. But you won't hear me complaining.

Loaded Baked Potato Salad

Potato salad is a perfect addition to any summer grill out, but having the same thing over and over can get kind of boring; in my opinion at least. To mix things up a bit, I decided to do a twist on one of my favorite sides, a loaded baked potato, but turn it into a chilled salad for the warmer summer months. I have made this twice now for gatherings, and it has been a huge hit each time! It's super easy to put together, and pairs nicely with pretty much any main dish you want.
