Broccoli Ham Stroganoff


My job fluctuates between being a comfortable amount of busy and beyond busy quite often. This week is definitely one of those super crazy weeks. When that happens, I'm usually a zombie by the time I get home and certainly don't feel like putting a lot of effort into cooking. That's where recipes like this one can be life savers, or meal savers? Either way, easily do-able without much effort or brainpower. 

This Broccoli Ham Stroganoff took 20 minutes tops and the hardest part was making the pasta. All of the other ingredients are cooked in the microwave, and if you have pre-diced ham and steam-in-the-bag broccoli on hand, then you will cut your time down even further. My husband got home just as I was putting dinner on the table so he didn't see how the meal was prepared. After he raved about how good it was, I asked him if he could tell that it was made in the microwave to which he replied, "You made this in the microwave??". Definitely a winning recipe!


Broccoli Ham Stroganoff

You will need:
1 tablespoon butter
1/4 cup onions, chopped (I omitted these since I didn't have any on hand)
3 tablespoons gluten-free all-purpose flour (King Arthur)
10.5 ounces gluten-free chicken broth
1 cup sour cream
2 cups frozen broccoli
2 cups ham, diced
1 jar (4.5 ounces) sliced mushrooms, drained
1 8-ounce box Glutino pasta

1) Cook the broccoli according to package directions. I used the steam-in-the-bag kind which involved microwaving for a few minutes. Set aside.

2) In a large microwave-safe bowl, melt the butter, uncovered, for 30 seconds to 1 minute. Add the chopped onions and microwave, covered, another 1-2 minutes, or until tender.

3) Mix in the flour until smooth. Slowly add the chicken broth while continuously stirring until blended. Microwave for another 4-5 minutes, uncovered, stirring at the 2-minute mark. Mixture will be come thick.

4) Meanwhile, prepared the pasta according to package directions. Once tender, drain and set aside.

5) Once thickened, remove broth mixture from microwave and mix in the cooked broccoli, mushrooms, diced ham and sour cream. Stir until well-combined. Microwave for another 2-4 minutes or until heated through.

6) Serve mixture over cooked pasta.
