Cream Cheese Stuffed Chicken



Pinterest is such a great resource for finding new and exciting dishes to try. I usually look for easy recipes that can be modified to be gluten-free by changing just a couple of the ingredients. My "Recipe Book" board is always growing with new things to try. This recipe is one of those that I found on Pinterest. The original recipe, "Kaytucky Chicken", is from Kayotic Kitchen's blog. I will be checking out more of her recipes since this one turned out fantastic!

The original recipe calls to wrap the cream cheese-filled chicken in puff pastry shells. I'm here to tell you that unless you have the time and patience, it's easier to just skip the puff pastry. I looked into making my own puff pastry, but the recipes I found were far more complex than this Lazy Girl dared to try. Maybe someday when I am feeling super adventurous. 

Since I modified this recipe and removed what was probably a key ingredient for you gluten-eating folks, I am simply going to call this recipe "Cream Cheese Stuffed Chicken". Creative, I know.


Cream Cheese Stuffed Chicken
(Modified from "Kaytucky Chicken")


You will need:
4 chicken breasts
4 oz Philadelphia cream cheese
2-3 strips of bacon, crumbled
1 tablespoon or more parsley, fresh or dried
1 small onion
dash of garlic
salt & pepper to taste 

Heat the oven to 400F.

Chop the onion and parsley (if using fresh). Mix onion, parsley, bacon, and spices with the cream cheese. Feel free to add anything else you think might be good. Mushrooms and cheddar cheese crossed my mind.

Cut a fairly deep slit lengthwise down the middle of each chicken breast. Spread 1/4 of the cream cheese mixture in each breast.

Bake chicken for 30 to 35 minutes.
